Carrots are a rich source of vitamin A and phytonutrients. They also contain vitamins K, C, E, B1, B2, B3, B5, B6, biotin, folate, potassium, manganese, copper and molybdenum. Green and red apples contain vitamin C, potassium, pectin and are rich in phytonutrients (polyphenols, carotenes and quercetin). Orange contains vitamin C calcium, iron, potassium, copper, B1, B5, folate and is rich in antioxidants (bioflavonoids, anthocyanins and polyphenols).
Carrot juice is particularly rich in the phytochemicals beta carotene and phenolic compounds which have been studied for their anti-tumour, anti-inflammatory, anti-oxidant, anti-carcinogenic and anti-aging properties, useful in aiding prevention of many diseases.
